Savoury French Toast

Something that I have always wondered about, why do we only see people making sweet French toast? If you’re anything like me, sometimes you just don’t want a sweet breakfast! This particular recipe is easy, yummy and will not take more than 12 minutes (from your fridge to your plate). AND — it’s super customisable! You can add whatever flavours you want.

The first time I ate this was after a night of partying and heavy drinking, you know the kind I am talking about. I woke up and dragged myself to the kitchen, got my cup of coffee and my friend, Lily, put this plate of food in front of me. My mind was blown with how simple and delicious this breakfast was. It has all the essential food groups one needs to nurse a bad hangover — bread, cheese, eggs and a hit of spice. Needless to say that I have made this hundreds of times(and hundreds of ways, maybe), and it never disappoints.

Savoury French Toast

Ingredients

2 Eggs
2 tsp of Milk
4 slices of Bread
Grated Cheese
1 Green Chilli
1 tsp Salt
1 tsp Coriander powder
Olive oil for cooking

What you will need is a large mixing bowl, a flat spatula and a frying pan. Break the eggs into your mixing bowl, add the milk, the seasoning and the spices and whisk together. Now we have the egg mixture ready. Get your slices of bread, you could cut them into fun shapes, I usually just use full slices.

Yummy, Eggy, Cheesy Bread

Get yourself a good pan and spoon in some olive oil, about a teaspoon for cooking two slices of eggy bread. I can’t put enough emphasis on the importance of having a thin metal spatula for this recipe.

Now, let’s take it one slice at a time, dip the bread into the egg mixture and coat evenly. You can flip the bread in the bowl to make sure everything is coated with eggy goodness. Once the oil is hot, place the bread on the pan. Depending on the size of your pan, you can either go one slice, two slices or three. I can fit two slices on my 9 inch pan. Keep it on medium heat. Flip the bread onto the other side in about 45 seconds. The cooked side should be a nice light golden shade. Once the other side is cooked, flip the bread again. Sprinkle the shredded cheese on the bread and flip it again. At this point, you can turn off your heat, the cheese will melt and cook in the residual heat from the pan. Take the spatula and get the bread off the pan, flip and serve on plate. The cheese would have melted and turned to a beautiful golden brown colour. We love eating this with ketchup, but any other dipping sauce works just as well. You could even try it with the sweet honey chilli sauce, that works like a charm.

TIP: The idea here is to season and spice your eggs, so any spice works. (Oregano, chilli flakes/ Basil and spicy tomato sauce/ red chillies and garlic/ salt and pepper) You can also add a few drops of Worcestershire sauce to any combo of spices; it always elevates the flavour. Literally anything you are in the mood for.

I have used plain white bread and cheese for this recipe but go crazy with any bread or fancy cheese you want to use. Like I said earlier, this recipe is something you can make your own and once you get to the flavour combination you love, that is going to become a breakfast favourite.
